I had this cake, it is so good, Ina made it a few times for me, It also has the same frosting as the Orange Cake.
Ingredients
Cake
2 1/2 cups of cake flour
10 tablespoons of unsalted butter, room temp
1 1/2 cup of raw sugar
4 eggs whites
2/3 cup of half and half
2 1/2 teaspoons of baking power
1 teaspoon of vanilla extract
1/2 teaspoon of almond extract
1/2 teaspoon of salt
1/2 teaspoon cream of tartar
Filling
1/3 cup of chopped figs
1/2 cup each of the following Raisins, walnuts, and pecans
Plus additional nuts for decorations (optional)
Frosting
4 egg whites
1 1/2 cups of sugar
1/3 cup of water
2 teaspoon light corn syrup
1 teaspoon of vanilla extract
1/4 teaspoon of salt
Directions
Cake
Preheat oven to 375 degrees
In a bowl whisk together flour and baking powder
Cream together butter and sugar until light, followed by the extracts and mix until creamy
In another bowl whip together the egg whites, salt, and cream of tartar until stiff but not dry.
Now in a 3 to 2 ratio add flour and half and half, starting and ending with flour
Once smooth, now fold in egg whites, once combined
Pour into 3 greased and parchment-lined 9-inch cake pans
Bake for about 20 minutes until firm and toothpicks come out clean.
Let cool for 5 minutes in the pan, then turn out onto a rake to cool.
Frosting
You will need a hand mixer.
Over a double boiler, mix all ingredients with a hand mixer until stiff white peaks form, about 7 minutes.
Assemble cake
Spread icing on the first layer, place sprinkle dates, raisins and nuts on the layer, repeat with the next layer, then place the top layer, and frost the cake. Decorate with nuts, optional.
