Key Lime Pie

Ingredients

Filling

10 key limes, juiced and zested

1 16oz can of sweeten condensed milk

4 tablespoons raw sugar

4 eggs yolks

Crust

1 box Nilla Wafers

1/2 stick unsalted butter, melted

1/4 cup raw sugar

1/2 tablespoon of key lime zest (from above)

Toping

1/2 cup of heavy cream

1/4 cup powdered sugar

1 teaspoon of vanilla extract

1/2 teaspoon of key lime zest

Directions

Crust

Preheat oven to 350 degrees

In the Cuisinart place Nilla Wafers, sugar and zest and crush into crumbs.

Pour into a bowl and add melted butter and stir until the mixture starts to hold together, then press into a pie pan and bake for about 15 minutes, until set.

Remove and cool

Filling

In a bowl whisk together the eggs and condensed milk, then add the lime juice and zest

Once blended pour into cooled crust and return to the oven and bake for 15 minutes, the center should be set. Then chill for at least 4 hours, longer is better.

Before serving, place topping into stand mixer and whip until firm, then pipe onto pie.
