Shrimp Orange Salad


There are many different variations on this salad, i have listed 4 here - Enjoy

Salad one

Ingredients

2 cups of cooked shrimp

1 cup coarsely chopped walnuts

2 cups of orange and grapefruit sections

3 tablespoons of dry sherry

3 tablespoon olive oil mayonnaise

salt and pepper to taste

greens of choice

Directions

In a large glass or plastic bowl, toss all ingredients except greens. Place in fridge for an hour, toss a few times during that time.

Place greens on place and top with shrimp mixture

Salad two - shown above

Ingredients

2 cups of cooked shrimp

1/2 cup thin sliced Jicama

2 cups of orange and grapefruit sections

3 tablespoons of grapefruit vinegar

3 tablespoon blood orange olive oil

salt and pepper to taste

greens of choice

Directions

In a large glass or plastic bowl, toss all ingredients except greens. Place in fridge for an hour, toss a few times during that time.

Place greens on place and top with shrimp mixture

Salad Three

Ingredients

1 large head of romain

3 large oranges, pealed and sectioned

1 large red onion, thinly sliced

2 cups of cooked shrimp

6 tablespoons olive oil

1 tablespoon lemon juice

1 table spoon grapefruit vinegar

2 tablespoons of fresh Italian Parsley, minced

1/2 teaspoon rosemary, minced

salt and pepper to taste

Directions

In a large bowl place romain, onion, orange sections and shrimp.

in a small bowl whisk together the remaining ingredients

Pour over greens and shrimp, toss.

Salad Four

Ingredients

2 cups of cooked shrimp

1 bunch of watercress

1 medium red onion, thinly sliced

2 large oranges, peeled and sectioned

1 avocado, peeled and diced

1 1/2 cup cherry tomatoes, cut in half

6 tablespoons olive oil

1 tablespoon fresh Tarragon, minced

2 teaspoons lemon juice

1 teaspoon grapefruit vinegar

salt and pepper to taste

Directions

Place all the ingredients in the first section in a large bowl.

In a small bowl place the second section of ingredients, whisk.

Pour of greens and shrimp, toss.
