Eggnog

Eggnog, you either love it or hate it. I am not really a fan but I have been playing with this recipe for years to see if I could come up with a drink I would like. During my journey to find the perfect eggnog, I looked at recipes from all over the world as well the centuries.

Using a classic French eggnog as my base here is what i have come up with. I have also listed some of the more interesting eggnog recipes that I came across. Enjoy

My Eggnog

Serves about 12

Ingredients

9 eggs separated, whites whipped until stiff

1 quart of milk or butter milk

1 pint of cream

1 cup of brandy

1/2 cup rum - I used a spiced rum

6 tablespoon of Agave

1 teaspoon of fresh grated nutmeg

Directions

In a large bowl whip together agave and egg yolks until smooth and creamy. Next slowly whisk in brandy and rum. Let stand for about 10 minutes, re-whisk if the mixture separates.

Fold-in egg whites along with a half of the nutmeg. Now whisk in milk and cream until smooth and creamy.

Serve and dust with the remaining nutmeg.

For a variation, only fold-in 3/4 of the stiff egg whites then follow the recipe above. Then pour into glasses and top with whipped eggs whites and dust with nutmeg.

Here is a recipe I came across that uses whisky instead of brandy, I did adjust the recipe a bit since it used some diary ingredients would hard to find unless you live near or on a dairy farm.

Whisky Eggnog

Ingredients

2 eggs separated, whites whipped until stiff

1 cup butter milk

1 cup of cream

1 cup of whisky

1/4 cup rum

2 tablespoons of Agave

Grated Nutmeg

Directions

In a large bowl whip together egg yolks and agave until smooth and creamy.

Next whip in the remaining liquids until creamy.

Fold in egg whites until smooth.

Serve on ice and dust with nutmeg.

General Harrison Eggnog

Ingredients

2 Jiggers of Claret

1 egg

1 1/2 teaspoon of sugar

Directions

Place all ingredients in a shaker and shake until frothy

Sherry Eggnog

Ingredients

1 1/2 jiggers of sherry

1 egg yolk

2 jiggers of milk

1 1/2 teaspoon simple syrup

nutmeg

Directions

Place all ingredients in a shaker and shake until frothy

Hot Eggnog

Ingredients

1 cup ale

1 1/2 jiggers of whisky

2 egg yolks, beaten

2 teaspoon of brown sugar

2 pinches of nutmeg

2 pinches of ginger

Directions

Warm ale in a sauce pan, add nutmeg and ginger.

In bowl whip together sugar and egg yolks until smooth. Now slowly whisk in the warm ale until smooth, followed by whisky. Serve warm.

Tiger's Milk

Ingredients

1 quart milk or butter milk

1 quart sweet hard cider

1 cup simple syrup

1 cup brandy

2 jiggers of peach brandy

1 egg white, whipped

2 drops each of the follow extracts: cloves, orange, vanilla and cinnamon

grated nutmeg

Directions

Whisk extracts, brandies into simple syrup in a large bowl, followed by the cider, milk, then egg whites, serve with dusting of nutmeg.

Frosted Rum

Ingredients

1/2 cup ice cold milk

1 Jigger of brandy

1 jigger of sweet white wine

2 teaspoons of simple syrup

1 egg separated, white whipped

1 drop of vanilla extract

Directions

In small bowl whisk together egg yolk and simple syrup, followed by brandy, wine, and vanilla until smooth. Next whisk in milk until creamy. Serve and top with egg whites.

Fancy Flips

Place the ingredients into a shaker, shake until frothy

Sloe Gin

1 jigger of sloe gin

2 dashes apricot brandy

1 egg yolk

1/2 teaspoon simple syrup

grated nutmeg to dust

Chocolate

1 pony sloe gin

1 pony of brandy

1 egg yolk

1 teaspoon simple syrup

Coffee

1 pony brandy

1 pony port

1 egg yolk

1 teaspoon simple syrup

grated nutmeg

Ice-cream

1 pony of maraschino

1 pony curacao

1 jigger of cream

1 jigger of milk

1 egg

Sherry

1 jigger of sherry

1 egg

1/2 teaspoon simple syrup

grated nutmeg

Cherry

1 jigger cherry brandy

1 egg yolk

1 teaspoon simple syrup
