Banana Oatmeal Cookies

Ingredients

1 3/4 cup of rolled oats

1 cup of unbleached flour

1 cup of mashed bananas

1 cup of raw sugar

1 1/2 sticks of unsalted butter, room temp

1/2 cup of wheat germ

1/2 cup of raisins

1/2 cup of roasted pumpkin seeds

1/2 cup of cocoa nibs

1/2 cup of toasted, chopped almonds

1/4 cup of black sesame seeds

1 egg

1 teaspoon ground cinnamon

1 teaspoon vanilla salt

1/2 teaspoon baking soda

1/2 teaspoon fresh ground nutmeg

Directions

Preheat oven to 375 degrees

Whisk together in a large bowl, the dry ingredients, flour, wheat germ, salt, spices & sesame seeds.

Whisk together in another bowl, oats, raisins, almonds, nibs and pumpkin seeds

Cream together the sugar and butter until smooth and creamy. Now add the egg and blend until smooth, followed by the banana.

Next, add the flour mixture to the banana mixture, blend until smooth. Now add the oats mixture until combined.

Using a 50 scoop, place dough on a parchment-lined cookie sheet, about 2 to 2 1/2 inches apart.

Bake for about 15 minutes until firm and lightly golden at edges.
