Fava Bean Gazpacho


I have been exploring different options for Gazpachos, over the weekend I made a Watermelon Gazpacho, but I was going through the pantry and I have all these dried beans, and I though, why try to create a cold soup with these other than always doing a hummus. So here is my first creation, i hope you enjoy it -

Fava Bean Gazpacho

Ingredients

1 1/4 lb shelled Fresh Fava beans, if dried you will need to soak them with a teaspoon of baking soda

2 slice of day old bread

1 clove of garlic, chopped

3 tablespoons of olive oil

1 tablespoon fresh Mint, minced

1 tablespoon sea salt

1 teaspoon of fresh lime juice -

Garnish: Have additional fresh fava beans for garnish, also zest the lime prior to juicing

Directions

Place bread in a bowl, add lime juice and just enough water to cover bread, let soak for about 1 hour.

Blanch fava beans in hot water for 2 minutes, remove and let cool.

Place bread and water into the food processor, followed by the balance of ingredients with the exception of the mint, puree. Strain into a bowl, chill for at least 3 hours.

With the balance of the fava beans for garnish, blanch in hot water for 2 minutes, remove and let cool, then toss with mint, zest and an additional tablespoon of olive.

Spoon soup into bowl and garnish with minted fava beans - Serve
