Brie Spinach Pasta

Okay I know it’s a bit out of the norm, one night I wanted pasta and I had spinach but was out of the traditional cheese for pasta but then I saw the small wheel of Brie in the cheese drawer and thought, “why not – go for it” and I did and it was amazing and simple – enjoy.

Ingredients

1 lb. box of penne cooked as per directions on package and reserve 1 cup of the pasta water

4 cups of fresh spinach

1 small wheel of brie, about 6oz, cubed

2 shallots, minced

2 cloves of garlic minced

1 lemon, zested and juiced

1 tablespoon unsalted butter

grated nutmeg

salt and pepper to taste

Directions

As pasta is cooking in a large, deep skillet or Dutch oven, place butter over medium heat and melt, then add shallots and sauté until soft, remove from heat and add garlic, seasoning, zest, and juice, stir and remove from heat.

Once pasta is done, return skillet to medium heat and add the pasta water and simmer for 2 to 3 minutes, now add pasta and cheese, toss to coat and melt cheese, just and cheese is just about all melted add spinach, toss, grate nutmeg over, toss again, remove from heat, transfer to a serving bowl and serve with a nice baguette.
