Ingredients
1, 20oz. package of tortellini, your choice of filling, I like Artichoke, prepared as directed on package
2 cups of cherry tomatoes, halved
2 ears of corn, cooked and removed from the cob
1, 15oz. can of black beans, drained and rinsed
1 red onion, diced
1 red bell pepper, diced
1 avocado, diced
Large handful of fresh cilantro, chopped and stems removed
Dressing
¼ cup of avocado oil
2 limes, juiced and zested
3 cloves of garlic, minced
2 tablespoons of red wine vinegar
1 tablespoon of agave
1 teaspoon of ground cumin
1 teaspoon of chili powder
3 sprigs of fresh oregano, leaves removed from stems and minced
Salt and Pepper to taste
Directions
Place all the salad ingredients in a large bowl and toss to combine.
In a small bowl whisk together all the dressing ingredients and pour over salad, toss well to coat.
