Bourbon Peanut Butter Popcorn Balls


Continuing with the Bourbon theme, here is another recipe from a contest I had entered, which came in third due to a used "Spirits."


Ingredients


12 cups of popped Pop Corn

1 cup of raw sugar

1/4 cup of smooth peanut butter - Not hydrogenated 1/4 cup of honey

1/4 cup of light molasses

1/4 cup of bourbon

1 tablespoon of canola oil


Directions


Place popcorn in a large bowl.


Except for the bourbon, place the remaining ingredients in a saucepan over medium heat, and whisk until smooth and reaches 260 Degrees on a candy thermometer. Remove from heat and whisk in the bourbon until combined.


Pour over popcorn and toss and stir to coat all the popcorn. Scoop out about 1/2 a cup of the mixture and form into a ball compressing as you form, place on a parchment-lined baking sheet, and repeat until done.
