Ingredients
1 1/2 sticks unsalted butter - 10 tablespoons of the butter melted and cooled slightly
1 1/4 cups of unbleached flour
4 to 5 apples of choice, peeled, cored and sliced - 1/2 inch thick
3 large eggs
1 cup of raw sugar
2 tablespoons raw sugar
1 teaspoon grated lemon zest
1 teaspoon baking powder
3/4 teaspoon of salt
creme fraiche
Salted Caramel Sauce - you can make your own, I just buy Trader Joes
Directions
Preheat oven to 350 degrees and butter a paper an 8-inch cake pan
Place a large skillet over medium-high heat, add the 2 tablespoons of the unmelted butter to skillet. Add apples to skillet and sprinkle with the 2 tablespoons of raw sugar. Cook apples, tossing every few minutes for about 10 minutes or until tender and they start to turn golden. Remove from skillet and arrange on the bottom of the cake pan - first layer.
In a large bowl whisk the remaining dry ingredients, followed by the eggs, and melted butter, whisk until smooth. Pour about half the butter over the apples in the cake pan, next layer the remain apples in pan and cover with the remaining batter. Place in oven and bake for about 40 to 50 minutes or until a tester comes out clean. Remove and let cool enough to handle, remove from pan and let cool completely.
Serve with creme fraiche and caramel sauce.
