I sort of just made these up the other day in prep for a dinner I was going to and another I need to make desserts for. Everyone liked them at the dinner party, and I hope they are a hit at the event I need to bring desserts to. And they are really simple to make.
Ingredients
3 cups of all unbleached flour
3 cups of brown sugar
2 sticks of unsalted butter, 1 cup
2 cups of chopped pecans
2 large eggs
3 teaspoons of baking powder
2 teaspoons of Vanilla Extract
1/2 teaspoon of salt
Optional Icing - I made some with and without, and I like it without the icing.
1 cup of brown sugar
1 cup of powdered sugar
1/2 cup of half and half
2 tablespoons of Bourbon
Directions
Preheat the oven to 350 degrees
Line baking sheets with parchment paper.
Combine the flour, baking powder, salt, in a bowl.
Cream together the butter and the brown sugar, next add the eggs and vanilla, cream until light and smooth.
Now add the dry ingredients until mixed well. Now fold in the chopped pecans. and place the bowl in the fridge for at least 1/2 hour.
Scoop at dough into 1 inch balls, and flatten slightly. Bake for 10 minutes, then cool on a rack.
Icing
Place sugar and half & half into a small saucepan and place over medium-high heat and whisk until sugar dissolves and the mixture is smooth, slowly add the powdered sugar, whisking until smooth. Next add the bourbon, whisking until well combined. Remove from heat and let cool to room temp.
Drizzle over cookie while on the cooling rack, and let the icing set.
