Last week I got the wonderful smoked cheddar from Saxelby Cheese Mongers at Chelsea Market, they ship as well go their website to see all the wonderful cheeses - https://saxelbycheese.com/
So I thought it would make a wonderful cheese shortbread cookie and it does - I only made this once and it turned out great but I would like here any feedback. I normally do not post a recipe unless I have made it a few times to make sure it works - A
Ingredients
1 cup unbleached flour
1 cup finely grated Cheddar cheese
1 stick unsalted butter - room temp
1/2 teaspoon of salt
1/2 teaspoon of freshly ground black pepper
pinch of cayenne pepper - optional
Directions
In a stand mixer cream the butter, salt, pepper, and cayenne until combined, now add the cheese, followed by the flour, once smooth, pour contents into a plastic wrap shape into a disc, wrap and place in the fridge for at least an hour to firm up.
Preheat the oven to 350 degrees
Line baking sheets with parchment paper.
Remove dough from the fridge, unwrap, and roll out to about 1/4 inch thick, since I do not have any cookie cutters were we are staying at the moment, I used a glass to cut out the cookies, collected and rerolled out the scrapes of the dough as to not waste any.
Bake for about 15 minutes or until edges starts to turn golden, leave on baking sheets for a few minutes to set, then transfer to a cooling rack.
