Whoopie Pies



These are fun to make, a wonderful devil's food cake-like cookie. You can fill them with ice cream, a simple icing, or what I like to fill them with a white. chocolate ganache. I have listed several fillings below.


Ingredients


Pies

3 cups of unbleached flour

2 cups 100% cocoa powder

2 cups of raw sugar

2 cups of buttermilk - room temp

2 sticks of unsalted butter - room temp

2 large eggs

1 tablespoon baking soda

2 teaspoons vanilla extract

1 teaspoon vanilla salt

1 teaspoon baking powder


Fillings

White Chocolate Ganache

1 cup of white chocolate chips or 2 4oz bars of white chocolate

6 tablespoons of heavy cream


Mint filling

2 cups of powder sugar

1 stick unsalted butter - room temp

2 egg whites

1/2 teaspoon of peppermint extract

1/4 teaspoon of vanilla extract

4 drops green food coloring


Raspberry filling

1 cup heavy cream

4 tablespoons of powdered sugar

1 cup of. fresh raspberries - smashed


Directions


Preheat oven to 400 degrees


Line baking sheets with parchment paper


In a bowl whisk together the flour, cocoa, salt, baking soda, and powder


In the stand mixer cream together the butter and the sugar until light, add eggs, buttermilk, and vanilla, beat until well combined. Reduce speed, slowly add the dry ingredients, mix until well combined.


I use a 1oz scoop, scoop out dough and place on prepared baking sheets, about 12 scoops per baking sheet 2 to 3 inches apart.


Bake for about 12 minutes, until firm, transfer to a cooling rack.


White Chocolate Ganache

Gently warm cream in a saucepan over medium heat, about 110 degrees. Remove heat and add, chocolate, and whisk until melted and smooth. Let cool about 15 minutes, you want it spreadable, not stiff.


Spread ganache on one cookie and sandwich with another, set aside to set up


Mint Filling

Cream butter and extracts in a stand mixer until well blended. Add egg whites and powdered sugar and beat until light and fluffy about 10 minutes. Add food coloring a drop at a time. Transfer to a piping bag and pipe onto one cookie and sandwich with another, set aside to set up.


Raspberry Filling

Place cream and sugar into a stand mixer and whip until soft peaks are achieved, fold in smashed raspberries. Spread filling on one cookie and sandwich with another, set aside to set up.
